Due to the pre-existing conditions of these buildings, our facilities are not recognized as one entity.We therefore face the hardship of having to limit how much space we designate as"tasting room". Zoning ordinance states that"A tasting room may not be greater than fifty percent of the main ;'building's gross square footage."As it stands, our tasting room comprises seven percent of our total square footage.We ask that the Board regard our tasting room as part of our main production facility,which would allow us to use up to fourteen percent of our total square footage as tasting space, keeping us far under the allotted fifty percent. Since our tasting room building, in and of itself, is currently considered our"main building", we are using half of its square footage to barrel-age cider.Our production team faces difficulties in efficiently and logistically using this space,as it is away from the rest of their production equipment and supplies. We are seeking this variance to remove all production from within the tasting room,and to create a larger tasting area. Having a larger tasting area will allow us to increase our occupancy, resulting In fewer lines and crowds outside on the street.
